In a mixing bowel
2 1/4 Cups of Sugar
1 Cup Vegetable Oil
3 eggs
3 tsp Vanilla
2 Cups shredded Zucchini
Mix following together
3 Cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
1 tsp Cinnamon
Pour into mixing bowel
Mix but do not overmix
Fold in 2 Cups Fresh or Frozen Blueberries
Pour into greased loaf pan
Bake at 350 for 50-60 minutes
If toothpick test is clean, Bread is ready!
If not clean, bake additional minutes until toothpick is clean,
Let cool, then transfer to rack for additional cooling
