1 1/4 cups flour
2 tsp. baking powder
2 Tbsp. sugar
3/4 tsp. salt
1 egg, well beaten
1 cup milk
3 Tbsp. melted shortening
1 cup blueberries
Sift together flour, baking powder, sugar and salt.
Combine egg, milk and shortening.
Slowly add flour mixture, stirring only until dry ingredients are moist but still lumpy.
Fold in blueberries.
Bake on hot greased griddle.
Turn pancakes when covered with bubbles, turn only once during baking.
Makes 10 to 12 pancakes.
